This simple recipe for easy carnitas (slow cooked Mexican pork shoulder) with all the fixings is adapted from the actor Danny TrejoUpcoming cookbook, Tacos de Trejo, which offers recipes from its famous restaurant chain of the same name in Los Angeles. He makes a generous amount of pork and the leftovers freeze well.
Point: For grilled pineapple: Heat a broiler pan over medium-high heat. Brush sliced fresh pineapple with olive oil; grill 2 to 3 minutes per side or until grill marks form. Chop for the optional garnish used here.

Carnitas Tacos
Ingredients
Carnitas:
- 1 tablespoon olive oil
- 2½ – 3 lb boneless pork shoulder
- 6 ounces bacon, cut crosswise into 2 inch pieces
- 1½ teaspoon freshly ground black pepper
- 1½ teaspoon cumin powder
- 1½ teaspoon red pepper flakes
- 1 teaspoon kosher salt
- ½ teaspoon dried oregano
- 1 Bay leaf
Pickled red onions:
- 1 medium red onion, halved and thinly sliced
- ½ cup the water
- ½ cup apple cider vinegar
- 1 tablespoon sugar
- ½ teaspoon kosher salt
Remaining ingredients:
- 12 (6 inch) corn tortillas
- Grilled pineapple, optional
- ½ cup Pickled red onions (recipe follows)
- ½ medium white onion, finely chopped
- ½ cup finely chopped cilantro
- 1 lime, cut into 6 wedges
- Hot sauce

Preheat the oven to 350 ° F.

Place a large heavy-bottomed saucepan or Dutch oven over medium-high heat. Add the oil; heat until shimmering. Add the pork shoulder and bacon. Cook for 10 minutes, turning the pork occasionally, or until the pork is browned on both sides and the bacon begins to fatten. Add black pepper, cumin, red pepper flakes, salt, oregano and bay leaf. Carefully (the mixture will splash) add enough water to reach halfway up the sides of the pork; bring to a boil. Place the pan uncovered in the oven. Cook, turning the pork every 30 minutes, 2 to 2 and a half hours or until the fork is tender.

Meanwhile, to prepare pickled red onions, place the red onion in a large heat-resistant bowl. In a medium saucepan, combine the water, vinegar, sugar and 1½ tsp. Kosher salt; bring to a boil. Remove from fire; stir until sugar and salt dissolve. Pour over the onions. Let stand at least 1 hour. (Or cool to room temperature, cover and refrigerate overnight.) Refrigerate for up to 1 week. (Makes about 1 pint.)

Once the pork is cooked, remove from the oven. Use a slotted spoon to transfer the pork to a cutting board. Discard the bacon. Coarsely chop or shred the pork.

Reduce the oven to 250 ° F.

Heat a large cast iron or non-stick skillet over medium-high heat. Work in batches to avoid overloading the pan; cook the pork for 5 minutes, pressing with a spatula or until golden and crisp.

Meanwhile, stack tortillas and wrap in aluminum foil; place in the oven for 15 minutes or until hot and soft.

Top each tortilla with about ¼ cup of carnitas. Garnish with pineapple, pickled onions, white onions and cilantro. Serve with lime wedges and hot sauce.
