Stacking sheets of tissue will improve the meat grown in the laboratory
Two researchers at McMaster University’s Biomedical Engineering Department have developed a way to grow meat that not only eliminates animals, but also gives more control over the texture and taste of the final product.
The idea of culturing animal cells to make meat, rather than from the animals themselves, is a fascinating proposal. Cultured and laboratory-grown meat also avoids the ethical concerns that many people have about eating meat, as it is considered to have less environmental impact than raising livestock.
However, growing meat is not like growing mushrooms. Meat is essentially a muscular organ, a complex collection of various tissues that have been exercised throughout the life of an animal to produce proper texture, consistency and taste. In addition, not only which cells are present in the meat, but also the proportion and distribution are of concern. Ravi Selvaganapathy and Alireza Shahin-Shamsabadi of McMaster University have figured out how to get some of this control. This method is derived from what was originally developed to grow tissue for human transplantation, producing a sheet of cells in a nutrient medium and concentrating it into a thin layer of paper on a growth plate. These sheets are then stripped, stacked or folded together and bound to each other before the cells die.
As a result, not only can you stack as many sheets as you need to create a meat slab, but you can also order the percentage of fat and the degree of marbling in much the same way as controlling the fat content of milk. In addition, the sheets are cultivated in days and can be assembled in hours.
The first demonstration of the concept was to make meat from mouse cells. The team couldn’t get close to the rat chops, so they made another sample from rabbit cells for cooking and tasting.
“It felt and tasted like meat,” says Selva Ganapathy.
According to researchers who founded a start-up company to market the concept, the technology can be extended to mass production and can be used to grow beef, pork and chicken.
