In the UK, an E. coli outbreak linked to lettuce has killed one person and hospitalized more than 120 people, including a 6-year-old child.

Two people in the UK have died within 28 days of being infected with the toxin-producing Escherichia coli (Stec), the UK Health Security Agency (UKHSA) said in a briefing on Thursday.

According to information from health service clinicians, one of the deaths was likely related to Stec infection, the agency said. Both people had underlying conditions. The deaths occurred in May.

As of June 25, there have been 19 more cases of Stec, bringing the total number of confirmed cases in the UK to 275, according to a briefing on the UKHSA website.

There are 182 cases in England, 58 in Scotland, 31 in Wales and four in Northern Ireland. All affected people had symptoms before June 4.

Several food manufacturers have recalled sandwiches, wraps and salads sold in large supermarkets and retail chains over concerns they are linked to the outbreak. The Food Standards Agency (FSA) previously said lettuce used in the product was believed to be the cause of the outbreak.

The UKHSA said that based on data from 249 cases, 49% of those affected were hospitalised. That means at least 122 people have been admitted to hospital for treatment since the outbreak began. Victims included an 11-year-old girl from the North West, who became seriously ill and was admitted to hospital after eating the supermarket's own brand chicken salad sandwich.

She was on dialysis for nearly three weeks after developing hemolytic uremic syndrome (HUS), a clinical syndrome associated with Stec that can lead to kidney failure and death.

E. coli is a diverse group of bacteria that are generally harmless and live in the intestines of humans and animals. However, some strains produce toxins that can make people very sick. For example, Stec.

People infected with Stec may develop diarrhea, with about 50% experiencing bloody diarrhea. Other symptoms include stomach cramps and fever. If there are no complications, symptoms may last up to two weeks.

Amy Douglas, UKHSA incident officer, said she expected more cases to emerge in connection with the outbreak as further samples were referred to the agency for testing.

FSA incident officer Darren Whitby said: Earlier this month, we confirmed that several sandwich manufacturers had taken precautionary action to recall and withdraw a range of sandwich, wrap, sub and roll products after epidemiological links across the food chain narrowed the outbreak down to a single type of lettuce used in sandwich products.

This remains a complex investigative process and we continue to work with relevant businesses and local authorities to ensure the necessary steps are being taken to protect consumers.

We are confident the outbreak is linked to lettuce, but we are continuing to work with growers, suppliers and manufacturers to confirm this and determine the root cause of the outbreak so steps can be taken to prevent a recurrence.

He said: This outbreak highlights the importance of robust food safety measures throughout the supply chain and highlights the need for continued vigilance of both industry practices and consumer awareness.
