Strawberry chicken with micro-green tea sandwich
Make 5-6 cups of salad
This strawberry chicken salad is a vibrant color and flavor. These lovely tea sandwiches pair well with robust black or fragrant oolong tea.
ingredients
- 4 cups sliced chicken sliced
- 1 large shallot, diced
- 1/2 cup chopped toasted nuts
- 2 tablespoons fresh basil, chopped or chiffonade (or more if desired)
- 1/3 – 1/2 cup good quality mayonnaise
- Salt and pepper to taste
- 1 quart of strawberries, chopped
- 1 tablespoon apple cider vinegar
- 1 cup of micro-greens
- 1 – 2 loaves of bread
- 2-3 tablespoons butter
instructions
In a large bowl, combine the chicken cubes, shallots, walnuts and basil. Fold in mayonnaise and season with salt and pepper to taste.
Pour in the chopped strawberries and apple cider vinegar. Cool the strawberry chicken salad for about 30 minutes.
Cut the crust of the bread slice. Spread the chicken salad on half a slice of bread, then grease some butter on the other half of the slice of bread. Put a spoonful of micro-greens on top of the chicken salads, then coat the top with butter. Cut in half diagonally and place on a baking tray. Continue until all the sandwiches are made. This salad is lovely on dark rye, sour soup, white and whole grain.
