Vegetarian taquito recipe with black beans and corn that is fun to make and eat

I challenged myself this week to make a really quick, easy, cheap dinner out of what I had in my pantry and fridge, and I found myself returning to the old standby from my post-college days: taquitos.
These small corn tortillas filled and wrapped in crispy cigar-shaped treats bring back great memories that dinner was often the kind of simple snack food they enjoyed with a group of friends.

I find taquitos to be fun. How many dishes can you say about it? Tortillas roll over stuffing – in this case, canned black beans and corn, grated cheese, salsa and dried spices – baked until crispy, then served on all sides you have on hand: salsa, sour cream, fresh kilantro, onion sliced on dice and tomatoes.
You can become more imaginative by filling it more complex with spicy meats or seafood, fresh spices and spices such as shells or peppers. I made this a little more complicated than it must have been by mixing my own dried spice blend and shredding homemade fresh mango and onion salsa.

Many people fry taquitos. They are tasty that way, but it can get messy. I prefer to just roll them, put them on a tin plate, coat with olive oil and bake until they are crispy.
Some seal the edges of the tortilla by washing the eggs, or using toothpicks or skewers to hold them tightly. This is important if you plan to fry them, but if you are baking them, just stack them firmly on a sheet and they should remain firmly rolled.
One caveat: this recipe makes 24 taquitos. If you are not going to eat the whole batch, it is best to put the tortillas and stuffing separately in the fridge and bake as you go. This makes them a great option if they do not eat in your house at the same time. Once baked, they should be eaten immediately to maintain their crispness.

I find that about four taquitos per person with a generous amount of salsa and dressing make enough for a light dinner. If you have ingredients for making vegetables with vegetables or a side dish with vegetables, serve them.
Oven black beans and corn taquitos with mango salsa
Kids may want to help roll up those little cigar-shaped touches. They make great snacks or pair them with salsas, tomatoes, onions and cream for easy enjoyment.

FOR TAQUITOS
2 cups mashed, boiled black beans
1/2 teaspoon chilli powder
1/2 teaspoon cumin
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1 cup of fresh, canned or frozen whole corn kernels
1/4 cup medium salsa
1 1/2 cups of roughly grated crisp cheddar cheese or crushed Queso fresco
24 (6-inch) corn tortillas
Olive oil or ringless cooking spray
FOR SALES
1/4 cup minced garlic
1 jalapeño pepper, stem, seed and ground (can replace 1/4 teaspoon crushed red pepper flakes)
3 tablespoons fresh lime juice (from 2 lime)
2 tablespoons extra virgin olive oil
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper
10 ounces (1 1/2 cups) frozen mango, melted and roughly chopped

Step 1
For taquitos: Place a rack in the middle of the oven and heat to 375 degrees.
In a medium bowl, mix together black beans, chili powder, cumin, pepper, salt, red pepper flakes, onion powder, garlic powder, oregano and cayenne pepper. Add corn, salsa and cheese to the bowl and stir gently to combine.
Step 2
Place the tortillas on a large lined baking sheet and transfer to the oven for about 1 minute, to soften. Remove the baking sheet from the oven and place a clean kitchen towel over the tortilla to keep them warm.
Step 3
Place the tortilla on a work surface and place 1 tablespoon of the black bean mixture in a line over the top. Wrap the cake tightly around the beans so they are in the middle, like a large cigar. Lay it seam down on the baking sheet.
Continue with the remaining tortillas and beans, stacking the taquitos side by side so they don’t get ready.
Step 4
Using a pastry brush, lightly brush the surface of the taquitos with oil or lightly coat them with a ring spray without cooking spray.
Bake for 18 to 20 minutes, until light brown and crispy.
Step 5
For salsa: While the taquitos are baking, make the salsa. In a medium bowl, combine the onion, jalapeño (or crushed red pepper flakes), lime juice, oil, cumin, salt and pepper until blended together. Fold gently into the mango. Cover and cool before serving.
Serve taquitos with mango salsa on the side.
