Sticky Mat Fried Chicken Uduk Rice has been around since 1973, the typical recipe is still maintained
RRI.CO.ID, Jakarta – Nasi Uduk Ayam Goreng Mat Sticky in East Jakarta is one of the legendary culinary delights that still survives today. Even the 7th President of the Republic of Indonesia, Joko Widodo, is said to have sampled its signature menu on several occasions.
This family business has existed since 1973 and is today managed by the third generation, Widjaya. He said the business was started by his grandmother to help the family financially.
Initially, the grandmother sold uduk rice and fried chicken simply in front of the house using a small table. “Initially, we sold small items on a small table in front of the house. In the afternoon, we only took five chickens,” said Widjaya in conversation with Pro3 RRI, Sunday, May 10, 2026.
He explained that at that time, the chickens sold were small because they fit the company’s capital. However, the customers continued to increase until finally the family set up a tent in front of the house.
Widjaya explained that the name “Mat Sticky” came from his grandfather’s nickname. According to him, such nicknames are commonly used in Betawi culture.
“Mat Lengket is actually a nickname, for the Betawi it’s usually Mat Pelor, Mat Gobang. My grandfather was famous there, Mat Lengket, so that’s his real nickname or nickname,” he said.
Widjaya himself became fully involved in the management of the family business in the early 2000s. He emphasized that the recipes and cooking methods used have always been maintained since its creation.
“Since my grandmother’s time, there has been no change. Even cooking has been passed down, once it was the mother who had the spices, now it is passed down to her son,” he said.
He added that the cooking process is still passed down from generation to generation within the family. In fact, her mother still regularly tastes the chili sauce and uduk rice concoction to maintain consistency in taste.
According to Widjaya, one of the differences between Mat Lengket and other Betawi uduk rices is the chili sauce. While Betawi uduk rice usually uses peanut sauce, Mat Lengket chooses a tomato-based red chili sauce.
“If it is different, we will be different in chili sauce. Usually Betawi uduk rice uses peanut chili sauce, ours uses red chili sauce, tomato chili sauce,” he said.
In a day, Mat Sticky can eat about 300 chickens on a weekday. Meanwhile, on weekends, the number increases to around 400 chickens per day.
The majority of customers come from Jakarta and the Jabodetabek area. This stall opens from 5:00 p.m. WIB to around 10:00 p.m. WIB, although on weekends the merchandise often runs out more quickly.
As for the price, uduk rice costs IDR 10,000 per serving. Meanwhile, fried chicken is sold at IDR 19,000 per piece and liver and gizzards at IDR 5,000 per skewer.
