Istanbul Restaurant in Hawaii hosts a fundraiser for Turkey and Syria earthquake victims

HONOLULU (HawaiiNewsNow) – A Turkish family in Honolulu is hosting a fundraiser at their Istanbul Hawaiian restaurant to help people in Turkey and Syria who are struggling to rebuild their lives after powerful earthquakes devastated the area last month. Almost 50,000 people died.

Mother-daughter team of chefs Neli Yildirim and Ahu Hitema joined HNN Sunrise Weekends to create one of Turkey’s signature dishes called cilbir, made with hard-boiled eggs from Waimanalo farm, homemade garlic yogurt, Turkish pepper paste, brown butter, thyme, dried mint, and dates. It is served with homemade sourdough bread that has been leavened for 12 hours before being baked.

“Everything is home made, mother’s recipes,” said Chef Ahu Hitema. “Turkish cuisine is a very big kitchen because it is the kitchen of the cultures, the kitchen of the Ottoman cuisine. It is almost impossible to represent the whole kitchen in one restaurant. What we tell our guests here is that we cook what we like to eat, what I grew up eating because that is what makes me happy.”

Hetima, who is from Mersin on Turkey’s southern coast, said many of her friends and vendors were affected by the quake.

She’s partnering with Hawaiian artist Lenny Acosta Knight to raise money to help provide warm meals to people who have been missing out on so much.

On March 13th and 14th from 1-8pm, the restaurant will host an exhibition and auction of some of Knight’s paintings. Prints will also be available for sale, along with homemade Turkish delight on traditional copper plates. Proceeds will benefit World Central Kitchen and Doctors Without Borders.

“We found that an organization that cooks for people and provides hot meals to people, nothing makes us happier than providing hot meals to people,” Hetema said. “And it’s also the whole organization is a very reputable organization created by Chef Jose Andres, who’s also on site and cooking for people.”
