material:
1 cup all purpose flour
1 cup whole grain
3 tablespoons chia seeds
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup granulated sugar
2 eggs
1/2 cup canola oil
Zest and juice from 2 large lemons (about 1/2 cup of juice)*
direction:
- Preheat oven to 350 degrees Fahrenheit and line muffin tins with baking paper or grease muffin tins. set aside.
- Combine flour, chia seeds, baking powder, baking soda, and salt in a large bowl. set aside.
- In another bowl, combine sugar, eggs, oil, lemon zest and juice. Mix well.
- Add the wet mixture to the dry mixture and stir until just blended.
- Pour batter evenly into muffin cups. Bake for about 22 minutes or until a toothpick sticks through the middle.
- Let mold cool for 5 minutes before removing muffins from mold. Allow to cool completely before storing in an airtight container.
*If the juice from 2 lemons is less than 1/2 cup, add a little more water.
